Garlic Roast Potatoes

“They taste as good as they sound. Cooked with fresh lemon juice and oregano – once tasted, you’ll realise there’s no other way to roast potatoes.”

Preparation time: about 10 minutes
Cooking time: about one hour
Oven temperature: 230°C
Serves: 6-8

INGREDIENTS
• 900 g large potatoes, peeled
• 120 ml freshly squeezed lemon juice
• 120 ml water
• 50 ml olive oil
• 2 tsp. dried oregano
• 3 garlic cloves, very finely chopped
• Salt and freshly ground black pepper, to taste

METHOD
1. Preheat the oven to 230°C. Cut the potatoes into quarters or eighths lengthways and place in a large, shallow, ovenproof dish.

2. Add the remaining ingredients and stir the potatoes to coat. Bake at the top of the oven, uncovered, for one hour, or until lightly golden, crisp on the outside and soft inside. Rearrange the potatoes, and add a little more water if necessary, during cooking.
